Orange-Walnut Salad with Chicken:
INGREDIENTS
- 1/3 cup walnut oil
- 1/3 cup orange juice
- 1 tablespoon red-wine vinegar
- 1 clove garlic, minced
- 1 teaspoon freshly grated orange zest
- 1 teaspoon reduced-sodium soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 3 cups mixed greens
- 1/2 cup diced or shredded cooked chicken breast (see Notes)
- 1 orange, cut into segments (see Notes)
- 2 tablespoons crumbled goat cheese
- 2 tablespoons toasted walnuts (see Notes)
PREPARATION
- Place oil, orange juice, vinegar, garlic, orange zest, soy sauce, salt and pepper in a bowl or a jar with a tight-fitting lid; whisk or shake until well combined.
- Place greens in an individual salad bowl; toss with 2 tablespoons of the dressing. (Refrigerate the remaining dressing.) Top the greens with chicken, orange segments, goat cheese and walnuts.
Vegitable Egg Salad:
INGREDIENTs
- 3 tablespoons nonfat plain yogurt
- 3 tablespoons reduced-fat mayonnaise
- 1/4 teaspoon freshly ground pepper
- 1/8 teaspoon salt
- 8 hard-boiled eggs (see Tip)
- 1/2 cup finely chopped carrot
- 1/2 cup chopped cucumber, peeled and seeded if desired
- 1/4 cup sliced scallions
PREPARATION
- Combine yogurt, mayonnaise, pepper and salt in a medium bowl.
- Halve eggs and discard 4 of the yolks (or save for another use). Add whites and the remaining 4 yolks to the bowl and mash to desired consistency. Gently stir in carrot, cucumber and scallions.k9ob
Summer Tomato, Onion & Cucumber Salad:
INGREDIENTS
- 3 tablespoons rice vinegar
- 1 tablespoon canola oil
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper, or more to taste
- 2 medium cucumbers
- 4 medium tomatoes, cut into 1/2-inch wedges
- 1 Vidalia or other sweet onion, halved and very thinly sliced
- 2 tablespoons coarsely chopped fresh herbs, such as flat-leaf parsley, chives and/or tarragon
PREPARATION
- Whisk vinegar, oil, honey, salt and pepper in a large shallow bowl.
- Remove alternating stripes of peel from the cucumbers. Slice the cucumbers into thin rounds. Add the cucumber slices, tomatoes and onion to the dressing; gently toss to combine. Let stand at room temperature for at least 30 minutes and up to 1 hour.
- Just before serving, add herbs and toss again.
