1)Chicken Manchurian:
Ingredients:
250 gm chicken mince
2 eggs, slightly beaten
3/4 cup refined flour
1/2 tsp garlic paste
1/2 tsp ginger paste
oil for deep frying
2 Tbsp oil
1 tsp finely chopped garlic
1/2 cup finely chopped onions
1 large capsicum-chopped fine
For sauce, mix together:
3 Tbsp corn flour-blended
1/2 cup water
2 Tbsp vinegar
2 tsp salt
2 tsp soya sauce
1/2 cup tomato puree
2 Tbsp chopped celery or 1/4 tsp celery salt
2 cups water
Method:
*Mix together the chicken, egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thick batter. Leave this for 5-10 minutes.
*Heat the oil, keeping the heat high drop heaped teaspoonfuls of batter and fry to a golden brown. Drain on absorbent paper till required.
*Heat 2 Tbsp of oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. *Add the capsicum and turn around a few times.
*Add the sauce mixture, and simmer till the sauce thickens and becomes translucent.
*Add the fried balls, turn around a few times and serve.

2)Garlic and Egg Fried Rice:
Ingredients
2 tsp oil
1 egg, whisked
1/2 tsp mashed ginger
6-7 cloves garlic, mashed
1 red chilli, chopped
1 bowl steamed rice
Salt, to taste
Pepper, to taste
1 tsp soya sauce
1 tsp chopped coriander
Method:
In a pan add oil.
Add the egg. Cook for a minute.
Add the ginger, garlic and red chillies.
Add the steamed rice. Toss well.
Add salt, pepper and soya sauce.
Garnish with coriander leaves.
Serve with Asian BBQ chicken.

3)Rice Noodles with Stir Fried Chicken:
Ingredients:
1 small bowl rice noodles, re-hydrated
1 tsp soya sauce
1 tsp lime juice
1 red chilli, chopped
Coriander, to garnish
Toasted peanuts, to garnish
Spring onion greens, to garnish
For the stir fried chicken:
1 Tbsp oil
2 chicken breast, cut into thin strips
250 gm calamari (Optional)
1 tsp soya sauce
1 tsp oyster sauce
1 Tbsp lemon juice

For the stir fry:
1 onion, sliced
1 tsp oil
1/4 capsicum
1/4 yellow bell pepper
1 small bowl Chinese cabbage
2 cloves garlic, minced
Salt, to taste

Method:
For the stir fry:
In a pan add oil, onions, capsicum, yellow bell peppers. Saute.
Add the Chinese cabbage, minced garlic and salt. Keep aside.
For the stir fried chicken:
In a bowl marinate the chicken and calamari with soya sauce, oyster sauce, lemon juice.
Stir fry it in a pan with some oil till done.
The main dish:
In the pan with the stir fried chicken add the rice noodles and stir fried vegetables.
Add soya sauce, lime juice, red chillies. Toss and add coriander leaves.
Garnish with toasted peanuts and spring onion greens.
Serve.

4)Stir Fried Tofu with Rice:
Ingredients
For the tofu:
100 gm tofu
2 tsp Sam pal oleic (a type of sauce)
1 stick lemon grass
2 shallots chopped
1 inch ginger chopped
2 tsp soya sauce
3 cloves garlic chopped
1 inch red onion chopped
2 tsp honey
Handful chopped coriander leaves
1 tsp refined oil

For the fried rice:
Chopped carrots
Chopped spring onions
Salt & pepper to flavor.
1 fresh red chilly chopped
1 piece chopped ginger
2 tsp soya sauce
1/2 a lemon squeezed
Handful chopped coriander leaves
1 tsp olive oil
Method:
Drizzle refined oil in a preheated pan and add chopped mariner and stir well.
Then add ginger, garlic, shallots and salt & pepper.
Add Sam pal oleic soya sauce and honey
Add some coriander leaves and mix it all together.
For the fried rice:
Drizzle olive oil in a pre-heated pan and add carrots, spring onions, ginger and salt & pepper.
Then add fresh red chilly, lemon juice and soya sauce and stir all together.
Add some chopped coriander leaves.
Cook it away for 5-7 minutes.
Serve it on a platter.

5)Chilli Fish :
Ingredients
250 gms fish pieces (Boneless)
1/2 cup maida
1/2 cup corn flour
1 tsp baking powder
2 tsp soy sauce
2 Tbsp celery (finely chopped)
1/2 tsp pepper
Salt
Oil
Spring onions, to garnish

For the sauce:
1 Tbsp ginger, chopped
1 Tbsp garlic, chopped
1 Tbsp green chilly, chopped
4 Tbsp soy sauce
5 Tbsp tomato sauce
1 Tbsp chilli sauce
1 Tbsp corn flour
Method
Cut the fish into finger pieces.
Make a batter with corn flour, maida, baking powder, soy sauce, celery, pepper powder, water and salt.
Dip the fish pieces in the batter and fry in oil till golden brown. Transfer fish into a serving plate.

For the sauce:
Heat oil in a pan.
Saute garlic, ginger and green chilly. Add soy sauce, chilly and tomato sauce to it.
Finally add corn flour mixed with water to it and stir well. Once it starts to boil, remove form fire.
At the time of serving, pour the sauce on top of fried fish pieces and mix well.
Garnish with chopped spring onions.

6)Fragrant Noodles:
Ingredients:
400 gm thin spaghetti
2 Tbsp sunflower or vegetable oil
4 spring onions, thinly sliced
100 gm coriander leaves, chopped
3 Tbsp soy sauce
1/4 tsp freshly-ground pepper
Method
Cook spaghetti according to package instructions.
Drain and set aside in a bowl.
In the saucepan used to cook the spaghetti, heat the oil over medium-high heat. 
Add the spring onions and fry for a minute. Remove from the heat. 
Stir in drained spaghetti, coriander, soy sauce and the pepper. 
Serve immediately.

7)Stir Fried Chilli Chicken:
Ingredients
2-3 Tbsp oil
4 cloves garlic, chopped
3-4 red and green chillies, chopped
1 cup chicken, cut into bite sized uniform pieces
2 tsp chilli sauce
4 tsp tomato puree
Soy sauce, a dash
1 tsp sugar
7-8 basil leaves
Method:
In a pan add oil. Add chopped garlic, chillies. Saute.
Add the chopped chicken and let it cook for a  minute. Coat the chicken with all the garlic and chillies. Add a little salt in that. Toss.
Once the chicken is almost cooked add chilli sauce, tomato puree, soy sauce and sugar. Cook till the sauce starts to reduce.
Add basil. Stir.
Serve.

8)Chicken Chilli :
Ingredients
1 Tbsp olive oil
400 gm chicken, boneless
1/2 cup onion, chopped
2 Tbsp ginger paste
2 Tbsp garlic paste
1 Tbsp soya sauce
A pinch of sugar
1 tsp green chilli sauce
Salt and pepper to taste
1 capsicum, julienne
Method
Heat oil in a pan. 
Add onions, garlic and ginger paste. Fry till they are cooked and onions turn light brown.
Add chicken chunks. Add a pinch of sugar. Mix well.
Add soy sauce, green chilly sauce, salt, pepper and capsicum. Toss.
Let the chicken cook (10-15 minutes).
Serve hot.

9)Gobhi Manchurian:
Ingredients:
500 gm cauliflower - grated 
2 eggs - slightly beaten 
3/4 cup refined flour 
1/2 tsp garlic paste 
1/2 tsp ginger paste 
1/4 tsp ajinomoto - optional 
Water 
Oil for deep frying 
2 Tbsp oil 
1 tsp finely chopped garlic 
1/2 cup finely chopped onions 
1 large capsicum - chopped 

For Sauce, Mix together:
3 Tbsp corn flour, blended with 1/2 cup water 
2 Tbsp vinegar 
2 tsp salt 
2 tsp soya sauce 
1/2 cup tomato puree 
2 Tbsp chopped celery or 1/4 tsp celery 
Salt 
1/4 tsp ajinomoto - optional 
2 cups water
Method:
Mix together the cauliflower, egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thickish batter.
Leave thus for 5-10 minutes. 
Heat the oil and keeping the heat high drop heaped teaspoonfuls of batter and fry to a golden brown. 
Drain on absorbent paper till required. Heat the 2 tbsp oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. 
Add the capsicum and turn around a few times. 
Add the sauce mixture, and simmer till the sauce thickens and becomes translucent. 
Add the fried balls, turn around a few times and serve.

10)Lemon Glazed Vegetables:
Ingredients:
1/2 kg baby potatoes - boiled and halved 
1/2 kg steamed cauliflower florets 
1/2 kg snow peas/ beans

For the Lemon Glaze:
1 Tbsp butter 
1/2 tsp garlic paste 
2 tsp sugar 
1/4 tsp ground ginger 
1/4 tsp ground coriander 
2 Tbsp corn flour 
300 ml stock 
2 Tbsp lemon juice 
Garnish:
1 Tbsp shredded, blanched lemon peel 
1 Tbsp toasted shredded almonds
Method:
Keep potatoes and cauliflower hot, and saute the snow peas/ beans are in butter. 
Remove and add beans to the vegetables. 
Cook garlic, sugar, ginger and coriander in same pan with remaining butter. 
After 1 minute, stir in blended corn flour and stock. Thicken. 
Sharpen with lemon juice. 
Season well. 
Serve immediately, garnished with lemon peel and almonds.
